this is a recipe my bff’s mum send it to me, i love the cupcakes so much ( including zach) , i need to save it somewhere for easy reference hehe
3 oz self raising flour
2 1/2 oz butter
2 1/2 oz sugar ( you may reduce if you do not want it too sweet)
1tsp baking powder
2 eggs
1 oz raisin ( you can replace it with others like rainbow rice)
1 tsp vanilla essence
Step
1. beat the butter and sugar until fluffy
2. add in the eggs and vanilla essence
3. add in the self raising flour and baking powder and continue to mix it until evenly
4. pour into the cupcake mould (about 3/4 of the mould) and sprinkle raisin or rainbow rice
5. preheat the oven at 150c for 10 minutes
6. bake the cupcakes for 18 minutes
Note : 1 oz is 28.349 gram ( which i use 29g)
