I am a big fan of tou miao since young. Usually i will stir fried it with garlic and oyster sauce and it will taste fantastic in its very simple style of cooking. This time round, i decided to do something more complex and hope you guys will like it.
Stirred fried Tou Miao in my style
Ingredients
1-6 pieces of dried scallop (boiled until they are soft, seperate the scallop and keep the stock)
2-3 clove of garlic
Tou miao ( main ingredient)
4 egg whites
Seasoning
1 table spoon of abalone sauce
1/2 table spoon of Shao Xing wine
little soya sauce for taste
Steps
1. Cook the egg whites until scramble eggs style and put aside. Tip: You probably might watch the fire and also keep stirring until the egg whites are cooked. do not over cook else it will be very hard. I add more oil so that it will be more smooth
2. Add 1-2 table spoon of cooking oil, stir fried the garlic until it turn slightly brown.
3. Add in the tou miao and Shao Xing wine, soya sauce and stir fried it. once cook, put aside on a plate. Tip : Do not over cook the tou miao. The shao xing wine will help to remove the “vege” taste and add more fragrant to the dish
4. put the egg white on top of the cooked tou miao , followed by the dried scallop.
5. take the stock of the dried scallop, add in the abalone sauce and mix evenly. Prepare the corn starch to make it starchy. Pour it on top of the dish and serve when hot.
